Our Lamb Vindaloo pays homage to the Portuguese-influenced cuisine of Goa. The dish takes its name from the Portuguese "vinha d'alhos" (wine and garlic), which evolved into the spicy vindaloo we know today. We marinate tender lamb pieces in a potent mixture of wine vinegar, garlic, ginger, and a special vindaloo paste.
